Garam masala

Garam masala is a spice base in many Indian dishes - this one is well balanced with just the right amount of florality.

Ingredients
1 pcs black cardamom
4 pcs whole cloves
5 g back pepper corns
2 pcs cinnamon stick
10 g coriander seed
5 g cumin seed
5 g fennel seed
2 g star anise
1 pcs bay leaf
2 g mace flower
10 g poppy seed
2 g rose petals

Instructions

  1. Makes about 50 grams.
  2. Preheat the oven to 50C. Spread all the spices except poppy seeds and rose petals on a baking sheet.
  3. Place the baking sheet in the oven for about 2.5 hours.
  4. Take out the baking sheet and add the poppy seeds and rose petals and place in the oven again - but turn off the oven.
  5. Leave the sheet in the oven for about 30 minutes.
  6. Take out the spices and pour into a spice grinder or mortar and pestle and mix into a fine mix.
