Garam masala is a spice base in many Indian dishes - this one is well balanced with just the right amount of florality.

Ingredients
1 pcs black cardamom
4 pcs whole cloves
5 g back pepper corns
2 pcs cinnamon stick
10 g coriander seed
5 g cumin seed
5 g fennel seed
2 g star anise
1 pcs bay leaf
2 g mace flower
10 g poppy seed
2 g rose petals
Instructions
Makes about 50 g of spice mix.
Preheat the oven to 50C. Spread 1 black cardamom pod(s), 4 whole cloves, 5 g of black peppercorns, 2 cinnamon sticks, 10 g of coriander seed, 5 g of cumin seed, 5 g of fennel seed, 2 g of star anise, 1 pcs of bay leaf, 2 g of mace flower on a baking sheet.
Place the baking sheet in the oven for about 2.5 hours.
Take out the baking sheet and add 10 g of poppy seeds and 2 g of rose petals and place in the oven again - but turn off the oven.
Leave the sheet in the oven for about 30 minutes.
Take out the spices and pour into a spice grinder or mortar and pestle and mix into a fine mix.
