American blueberry pancackes

By whisking the egg whites, these American pancakes become incredibly fluffy.

Ingredients
150 g pancake mix
1 pcs egg
1 dl milk
2 dl yoghurt
30 g butter
125 g blueberries
powdered sugar
maple syrup

Instructions

  1. Melt the butter and let cool slightly.
  2. Separate the egg yolk and egg white, and then mix the egg yolk, milk, and yogurt in a bowl.
  3. Add the melted butter while whisking.
  4. Beat the egg white until fluffy and then fold into the other mixture.
  5. Add the pancake mix and mix gently.
  6. Fold about 2/3 of the blueberries into the mixture.
  7. Heat butter in a frying pan over medium heat, and spoon out batter, fry for about 2-3 minutes per side.
  8. Top with blueberries, dust with powdered sugar and serve with maple syrup.
