Cheese water

A water that is enriched with the flavor of Comté - this is then used to make delicious croustades. One batch yields around 80 grams of cheese water.

Ingredients
100 g comté
100 g water

Instructions

  1. Finely grate the cheese and mix with the water. Pour into a sous-vide bag and vacuum pack.
  2. Heat a sous-vide bath to 90C. Let the cheese and water bake for 1 hour.
  3. Carefully remove the bag (do not shake or anything like that as this will destroy the separation that has occurred) and let it sit at room temperature for about 45 minutes.
  4. Open the bag and pour through a fine-mesh strainer lined with cheesecloth.
