Slow-baked tomatoes

Cocktail tomatoes turn wonderfully sweet after a long time in the oven. Perfect as a side dish or in a pasta.

Ingredients
500 g cocktail tomato
2 pcs garlic cloves
2 tbsp olive oil
0.5 tbsp fresh thyme
0.5 tsp chili flakes
2 g salt

Instructions

  1. Set the oven to 120C and prepare a baking sheet with baking paper.
  2. Finely chop or grate the garlic.
  3. Pick the leaves from the thyme, avoiding the stems.
  4. Cut the tomatoes into pieces and place in a bowl. Add the oil, garlic, thyme, chili flakes and salt. Mix gently so that the tomatoes stay intact.
  5. Place the tomatoes on the baking sheet with the cut side up.
  6. Bake in the oven for 2-3 hours, the tomatoes will become drier but more intense in flavor the longer they are in the oven.
