Cocktail tomatoes turn wonderfully sweet after a long time in the oven. Perfect as a side dish or in a pasta.

Ingredients
500 g cocktail tomato
2 pcs garlic cloves
2 tbsp olive oil
½ tbsp fresh thyme
½ tsp chili flakes
2 g salt
Instructions
Set the oven to 120C and prepare a baking sheet with baking paper.
Finely chop or grate 2 cloves of garlic.
Pick ½ tbsp of leaves from the thyme, avoiding the stems.
Cut 500 g of tomatoes into halves and place in a bowl. Add 2 tbsp oil, the grated garlic, the thyme, ½ tsp chili flakes and 2 g salt. Mix gently so that the tomatoes stay intact.
Place the tomatoes on the baking sheet with the cut side up.
Bake in the oven for 2-3 hours, the tomatoes will become drier but more intense in flavor the longer they are in the oven.
