Apple cake

A classic Swedish apple cake that gets a nice crispy edge.

Ingredients
1 pcs egg
2 dl sugar
100 g butter
2 tsp vanilla sugar
½ tsp baking powder
2 dl flour
tsp ground coriander
tsp nutmeg
g salt
2 pcs apple
sugar
ground cinnamon
breadcrumbs

Instructions

  1. Set the oven to 200C.
  2. Prepare a springform pan by greasing and adding bread crumbs to it.
  3. Melt 100 g of butter and let cool slightly.
  4. Beat 1 egg/s and 2 dl sugar until fluffy.
  5. Add the melted butter and mix.
  6. Mix the 2 dl flour, ½ tsp baking powder, 2 tsp vanilla sugar, tsp coriander, tsp nutmeg and g salt. Add it, preferably by straining it through a fine-mesh sieve to avoid lumps, and gently fold together until everything is mixed.
  7. Take 2 apple/s and slice.
  8. Pour the batter into the springform pan and top with the apple slices.
  9. Mix cinnamon and sugar and sprinkle over the cake.
  10. Bake at 200C for about 25 minutes.
